Approx 3-4 people
Cooking time: 15-20 minutes
Pre-cook: Thinly slice two large cloves of garlic and lightly fry in a pan or wok. When light brown and crunchy set to the side to garnish on top of pasta later.
Cook up a bag of your favorite pasta. I like to use the different colored spiral pasta. Whilst this is cooking do the following:
Place in a wok or frying pan: 2 chopped zucchinis thinly sliced, one red pepper cut into chunks, portobello mushrooms or normal mushrooms chopped into slices and fry with a little olive oil.Sprinkle some garlic salt lightly over the vegetables if you have this on hand or sea salt.
When your pasta is cooked and draining add the following to the wok on a very low heat and mix:
Half a jar of Sundried tomatoes, handful of pumpkin seeds and 3/4 jar of your favorite Pesto. Mix with a fork and then add the drained pasta to the mix.
To garnish: Top with crunchy garlic bits and thin sheets of Parmesan cheese. For those that love olives add these to if you like.
